Sometimes I know you can replace semolina for cornmeal, more coarse and can make the outer texture of things more crisp (please note I didn't say crispy!), you know like when you do caramel chocolate squares. Everyone seems to indicate I can substitute it for cornmeal... I hope I don't screw up and find that I can't use it for the cornbread I just said I'd contribute to Thanksgiving? You sound very knowledgeable on the subject, though, so now I'm scared. I love that everyone's mothers have ideas for green tomatoes! After having occasional yearnings for cornbread, I finally had to import a few packages back from a trip to the states - I have seen them in the "imported" section here, but outrageously priced. I was told you can find coarse ground cornmeal in Indian groceries, but I have not been successful there either...<BR/><BR/>As for green tomatoes, my mother used to pickle them!
